Richard Sandoval’s vibrant Taqueria and Tequileria, El Centro D.F., will ring in the New Year with a Tamale Festival, the first of four quarterly festivals celebrating Mexican cooking. The festival will highlight the traditional Latin American dish made of stuffed masa wrapped in corn husks or banana leaves that are then steamed or boiled and showcase regional tamales combining authentic ingredients in unexpected ways.
