Las Palma's Mexican Restaurant was opened in 1995 by Rick Palma, who has been serving his Mexican dishes in Saint Joseph, Missouri for almost thirty years. Palma started cooking for the public in a little bar called Holt's in the south end of St. Joseph in October of 1977. The patrons of Holt's quickly acquired a taste for his enchiladas, tacos, and his now famous fiery red pork chili. Word of Palma's delectable Mexican dishes traveled around town and a few years later another bar, First Ward, approached him and asked if he would serve his food there. Glad to oblige, Palma cooked for the patrons of First Ward from September of 1984 until February of 1985, when he accepted an offer to cook at the Hi Ho Bar and Grill, where he continued until March of 1986. The craving for his recipes must have hit those back at Holt's, because they had him return to satisfy their taste for Mexican between November of 1986 and January of 1987. The desire for Palma's recipes had grown even stronger in his absence from the Hi Ho, so he returned there to cook from February of 1987 until November of 1990. This entire time Palma had only cooked on the weekends to earn a little extra money while he was working a full-time job during the week, however, in November of 1990, he received a phone call from the owner's of Johnny Fry's, a downtown restaurant who wanted him to serve his food there full-time.
