Argentina is known for its vast grasslands (Pampas) where the cattle industry flourished for the last 140 years. Argentine beef is considered among the best in the world. Buenos Aires, the capital of Argentina, is influenced by European culture, mainly Italian, Spanish, French, and English. The restaurants of this city are a perfect marriage of these origins, but the grill is the centerpiece. They serve the highest quality beef and lamb in a very eclectic atmosphere. The meat is placed atop wood fired grills to sear, then it is finished over charcoal to ensure that all flavors and natural juices are retained, enhancing the tenderness of the meat in the process.
