Long celebrated for its expansive golf course views, Windows' decor features a rich Southwest color palette of honeysuckle and maize, accented by hues of sage and celery. Decorative fabric panels create an intimate, upbeat ambiance for diners. The mood evokes a sense of cheer, and is designed to set the stage for a dining experience that is fun and above all, comfortable for resort guests and locals alike, said Brian Pierce, director of restaurants for The Phoenician. A lounge with billiards table and seating for private dining is also featured. The updated look complements the new Southwest Grill concept. The menu features such Southwestern specialties as tableside guacamole, pulled pork nachos, green chili posole with smoked duck leg, barbecued red snapper, Colorado lamb chops with creamy poblano grits, and grilled veal T-bone steak with chorizo-potato cake. A lobster and corn tamale and the Green Burger made with Angus beef and pork, served with a guacamole-tomatillo salsa are featured on the bar and lounge menus. The wine lists emphasize selections from California, Mexico, Chile, and Argentina, and offers a selection of moderately priced wines by the glass and half bottle. Specialty margaritas, including the Phoenician Gold, are featured, as well as different flights of boutique mescals and fine tequilas. An impressive list of microbrewed beers from around the globe is also offered.
