Using a Pressure Cooker
This workshop will teach you the basics about using a pressure cooker. You can preserve low-acid foods such as tomatoes, potatoes, pasta sauces, green beans, even meats using a pressure cooker. You can't do that using a traditional water bath canner.
Pressure cookers can also be used to quickly soften cuts of meat that would otherwise take hours to cook (you've seen them used on Iron Chef episodes to do this).
