Meet Franklin Peluso, third generation cheesemaker, who continues the family tradition of handmade Teleme cheese production in Los Banos, CA. Each batch of Teleme curds is hand-pressed to achieve a soft, creamy texture, the right moisture content, a slightly tangy and lemony flavor, and a smooth, runny quality. Taste samples of the mild Rice Flur Teleme or more pungent Washed Rind Teleme.
