Kubota

This is the place to go if you are craving fresh sushi or noodle bowls in San Jose. Located in the heart of Japantown, they serve up everything from traditional Japanese fare to more modern fusion-type dishes. Their sukiyake is among the best I've ever eaten. All their tofu comes from across the street (San Jose Tofu Company) and I can only describe the experience as eating little nuggets of goodness that fell from heaven. Dinner prices are a bit high, but you're essentially paying for the high quality ingredients. You can get a pretty good deal during lunch, however, when most dishes are half off.
