This course covers the history and processes of home white and red wine production. Topics include equipment and supplies, fermentation theory and practice; yeasts and starter culture; grape quality and quantity; selection and purchase of grapes; analysis of juice and wine; tasting components of wine; sanitation and cleaning agents; potential spoilage and stability problems; and aging and storage. Designed for the beginning home winemaker.
