Contemporary Mexican Cuisine: Homemade Tortillas and Duck Barbacoa with Garces Group's Chef Gregg Ciprioni
Registration Required. Chef Gregg Ciprioni, Culinary Development Chef for the Garces Group and all-around food wizard and stand-up gentleman, will teach student about Masa de Maiz: corn dough made from fresh hominy that is the base for tamales, fresh tortillas and other Mexican culinary staples. Gregg will also demonstrate how to butcher a duck and turn that lovely fowl into the day's main course: Duck Barbacoa with Queso Fundido. Everyone will learn how to make fresh tortillas at home.
