Wild Desserts: Carob Harvest and Preparation

In this class you will learn to identify, harvest, process and bake with the fruits of the Carob Tree which may be growing in abundance right under your nose! Carob (Ceratonia siliqua), a mediterranean tree in the legume family, has been widely planted in California as an ornamental and produces copious fruits ripening late October and November. The students will learn to identify the tree, when to harvest how to process and how to use the fruit pod in baking.
