Formerly the renowned chef of Mr. Chow, Philippe has at last decided after 27 years to start anew. Philippe will bring his culinary expertise & worldly experience from his beginnings in Hong Kong to his unique restaurant. He has been noted as one of the top Asian culinary masterminds of our time.
Chef Philippe Chow and Stratis Morfogen, co-owners of Philippe, the upscale Chinese restaurant in New York City, are opening a 400-seat restaurant at Gansevoort South Hotel in Miami in April.
Chow will be the executive chef, and noodle master Chef Wai Ming Cheng will run Philippe Miami’s unique noodle bar. Chefs will make different styles of hand-pulled noodles right at the counter—a theatrical element that breaks down the barriers between the kitchen and the dining room.
PhilippeMorfogen is overseeing interior décor, keeping the design to a minimalist fashion of glossy whites with accents of brown, black and red, like the New York original, which has established itself as an exclusive dining destination for celebrities, musicians and athletes.
The new restaurant is not an exact copy of Chow’s New York property, however. “There will be a new chef’s table, which will look down on the restaurant kitchen, and diners will be able to watch the chefs as they prepare all of the restaurant’s cuisine,” Chow says.
Philippe Miami will offer roomservice throughout the hotel, take-out and delivery, as well as off-premise catering for private events. The menu will offer Philippe classics, such as chicken satay, nine seasons spicy prawns, Peking duck and crispy beef.
