Italian Country Cooking
In the countryside, Italian cooks keep it simple, showcasing seasonal ingredients. (I never ate so much eggplant as one autumn in Sicily! Twice a day--and I didn't even like eggplant! They won me over, though, with the wonderful variety of preparation methods, and the freshness of the melanzane.) Our recent Tuscan tour provided great inspiration for a menu of simple but supremely savory dishes from bella italia. Light meal included.
