He's one of the owners of Rosa Maria's, after all, a Highland eatery that is famous for its burritos.Rosa Maria's is one of several restaurants in what can be called the "Burrito Triangle," where the competition to make the world's best is fierce. While there are many top-notch burrito joints throughout the Inland Empire, there are four with long-standing ties to the community and a loyal following that spans generations. The Robles family opened Rosa Maria's near the north end of Sierra Way in San Bernardino in the 1970s. The success of that flagship restaurant eventually spawned three others. The Highland restaurant, the second, has been serving its popular burritos to loyal customers for 11 years. Robles said one secret is "Mexican butter," or lard a common ingredient in traditional Mexican cooking. "Everything here is cooked in lard. That's what makes (our tortillas) so fluffy," he said. Rosa Maria's burritos are so popular, they are even shipped, frozen, to mail-order customers around the country.
