Meet the Speakers:
Ellen Desjardins, RD, PhD
Ellen Desjardins has had a two-decade long career as a nutritionist with Toronto Public Health and Region of Waterloo Public Health, and took part in food policy work at the federal and provincial levels during that time. In Waterloo, Ellen carried out community consultations that led to the formation of Foodlink Waterloo Region (2001) and the Waterloo Region Food System Roundtable (2007). With the latter group, Ellen helped develop food-related policies for the Regional Official Plan as well as a Food Charter for the Region—both of which were endorsed by Regional Council. Ellen was a founding member of Food Secure Canada in 2005 and the Canadian Association for Food Studies (CAFS) in 2006. Since obtaining a doctoral degree in 2010, Ellen became a research associate with the University of Waterloo and teaches courses on food systems sustainability. She has recently led a number of research projects specializing in qualitative methods, including a Food Literacy study with Ontario adolescents. She is currently the editor of the new academic journal, Canadian Food Studies .
Leia Minaker, PhD
Leia Minaker is a Scientist at the Propel Centre for Population Health Impact. She completed her PhD in Public Health at the University of Alberta, where she examined food environment assessment, and the relationships between food environments and residents’ dietary and weight outcomes. She has written a report with Health Canada entitled “Measuring the Food Environment in Canada” and is involved in creating a manual for communities to assess their food environments and identify actions to take following the assessment. Dr. Minaker’s passion is population health intervention research, which she does in the fields of both nutrition and tobacco .
