CO Collaborative Food & Beer Dinner

In celebration of CO Craft Beer Week we will be holding a very special five course Food & Beer pairing dinner on Wednesday 3/20/13. In each course chefs Lucas & Jon will will be not only pairing with limited release beers from Upslope Brewing Co, Ska Brewing Co, Oskar Blues Brewery, Odell Brewing Co & Breckenridge Brewery - they will also be cooking with a beer from each of them.
Representatives from each brewery will be on hand to answer questions.
There will only be 50 tickets total sold to this… Show more dinner with five separate seating times beginning at 6:00 pm. Tax, gratuity and a $5 donation to the Colorado Brewer's Guild are included in the $65 ticket price. We will stop selling tickets on Monday 3/18/13 in order for our kitchen to purchase and prepare the appropriate amount of food.

Welcome Beer: Your choice of Upslope Craft Lager, Ska Buster Nut Brown Ale, Oskar Blues Mama's Little Yella Pils, Odell IPA or Breckenridge Avalanche.
Course One: Duck Three Ways
Decadent duck confit, duck rillete w/ Upslope Foreign Stout Cream & coffee cured duck breast w/ espresso rum glaze
Paired With: Upslope Coffee Brown Ale
Course Two: Modus Green Salad
Bitter greens with rendered house made bacon, manchego cheese, pine nuts and sour orange. Tossed in Modus Hoperandi viniagrette.
Paired with: Ska Sour (name TBD)
Course Three: Gubna Spiked Lobster Ceviche
Succulent lobster and aji amarillo chile spiked with Oskar Blues Gubna, served with and avocado, citrus zest and smoked tostones.
Paired with: Oskar Blues OSKAr the G'Rauch
Course Four: 90 Shilling Peppercorn Elk
Leg of elk marinated in 90 Shilling then crusted with green peppercorn. Served with a sage herbed Ablert Bartlett potato puree and chanterelle mushroom Carmenere reduction.
Paired with: Odell Brewing Amuste
Course Five: Vanilla Porter Sweet Cream Canoli
A canoli filled with sweet cream swirled with Vanilla Porter and a bit of whiskey then dipped in orange chocolate and served with Pop Rocks.
Paired with: Breckenridge Stranahan's Barrel Aged Pandora's Bock.
