Latin American Christmas Dinner
For the Latino holiday meal, roast pork is king. Rotisserie a pork shoulder that has been marinating in the classic mojo (a combination of sour oranges, olive oil, oregano, garlic, and spices). There will be rice with pigeon peas seasoned both with adobo (a dry spice condiment) and sofrito (a cilantro-roccatillo pepper paste), tamales, an avocado-tomato salad, a cheese flan topped with papaya compote, and a tropical coconut-rum eggnog.
