The Saints philosophy is to source as many of its ingredients as locally as possible. Our beliefs tie in with our affiliation with the "Slow Food Movement" which have similar values. The majority come from within fifty miles of the restaurant and are free-range, organic & bio-dynamic. This meant that the Saint offers the freshest & tastiest dishes in Brighton & Hove (which has not travelled half way round the world to reach your plate).
To compliment the food is our "terrior" wine list with many lines unique to our local supplier Sheridan Coopers. The list is entirely European, mostly Mediterranean and the majority or our wines are from smaller family owned vineyards or co-operatives, which heighten their individuality.
