One Day Workshop
During this demonstration style class we’ll learn to butcher a whole hog from start to finish. Students will learn about pig anatomy, primal cuts and go home with 5-7 pounds of locally sourced Berkshire pork that has been portioned and vacuum sealed.

Time: 6:00pm - 9:30pm
Instructor: Chef John Percarpio

Attendees should:
- Bring a cooler with ice packs to safely transport the meat
- Wear comfortable clothes and closed-toed shoes.
