Purchasing larger cuts of meat can be fresher, more flavorful and more economical then buying pre-cut, pre-packaged proteins. Begin to understand the anatomy of mammals, learn how to efficiently deconstruct muscle groups, review proper knife skills and apply appropriate cooking methods . In class we'll teach you how to break down a whole chicken, fabricate bone-in pork loin and whole beef chuck.
