The plate lunch is what the locals eat in Hawai'i. It is fast, casual comfort food influenced by the melting pot of cultures found on the islands -- Hawaiian, Japanese, Chinese, Portuguese, Vietnamese, Korean and Filipino. A traditional plate lunch consists of an entree, 2 scoops of rice and 1 scoop of mac salad. I've kept the local flavor but adopted some healthy alternatives. The recipes used are my own and from the countless family gatherings that are the back bone of life back home on the islands.
