This nationally-recognized, award winning chef and charcuterie expert is the visionary behind Birmingham's Forest Grill and Milford's Cinco Lago restaurants. he is also the author of two books, "Craft of Salting, Smoking and Curing" and "Salumi: The Craft of Italian Dry Curing." Chef Polcyn will discuss his life and craft and prepare a creative dish to taste. The event include a book signing with books for sale. Cosponsored by the Culinary Historians of Ann Arbor.
