Celebrating Spring Vegetarian Dinner
With warm days and brisk nights, spring brings the beginning of nature’s bounty. Celebrate the season with a medley of dishes that take advantage of all spring has to offer. Tamara Flanders will demonstrate such recipes as spring ragout made from richly flavored baby carrots, turnips, mushrooms, and other early spring treats, lentil balls with cumin-spiced carrot puree, asparagus with garlic scapes and baby spring onions (and fiddleheads, if available), and scalloped baby turnips.
